4. A surround of red tiles calls attention to the cafe’s display of fresh-baked bagels.
5. A merchandising wall divides the ordering counter and coffee area.

6. In the new ordering system at Einstein Bros. Café, customers order and pay, then wait for servers to bring them their food.

7. High-backed booths and bright lighting make the cafe a comfortable work space for businesspeople.

8. Einstein plans to lower the cost of the prototype from $350,000 to $130,000 by streamlining the construction process and using stock sources for custom fixtures.
