PRESS RELEASE: Salt Lake City, UT, September 22, 2009 - Costa Vida, known for its Baja-inspired, always fresh meals, announced today the addition of fresh baked, made to order, fish tacos to the chain's health-conscious menu options. Costa Vida's fish tacos consist of a baked filet, seasoned with honey, jalepeño and cilantro, served with a cool, avocado ranch sauce, along with crispy cabbage. Costa Vida's menu is driven by Executive Chef Dave Prows, who strongly believes in doing things the right way, even if it takes a little longer.

"Our cod comes from the cold, clean water of the Atlantic, seasoned and baked fresh to order. It's not fried, breaded, pre-cooked, or smothered, leaving the dish packed with flavor," says Dave Prows, Costa Vida Executive Chef. "My inspiration when crafting this new menu item was to make something different from any other fish taco. I wanted to make Costa Vida's the best way possible, which takes a little more effort, but it's good for you, so it's worth it."
Costa Vida currently has 23 locations across the U.S. now serving fresh, flavorful fish tacos. Costa Vida has taken other steps to be part of the healthy, quick-serve trend by offering all-gluten free options to patrons, as well as using all natural, never processed ingredients. The chain is working toward a completely gluten-free menu.
